peanut butter balls
Move over, clif bar! These things are too good – you’ll have to behave and try not to eat too many at once!
In a saucepan, combine:
½ cup NATURAL peanut butter* (smooth works best) or almond butter
4 Tbl brown sugar
4 Tbl powdered milk (powdered rice or soy milk also works)
4 Tbl water
1 tsp. cinnamon
Stir constantly until mixture is hot. Remove from heat and stir in…
2 cups rolled oats (NOT quick/instant)
… until well combined. Shape into 1-inch balls and let set about 10 minutes. Makes about 20-30 snacks, depending on the size. Enjoy!
* natural peanut butter has one ingredient: peanuts. At the regular grocery store, you’ll find Laura Scudder’s natural, or at Trader Joe’s they have their own brand. At room temperature, give it a good stir until all the oil has mixed in, then refrigerate after opening. No more Skippy with added sugar and preservatives!
